Quick ‘n’ Easy Sunday Supper

Everyone in my family LOVES lasagna, but they could NEVER agree on which kind they wanted! Hubby always wanted his mother’s recipe, but it takes SEVEN hours to prepare and FOUR hours to cool – not always a workable option! And the kidlets always fought about whether they wanted rice lasagna or spinach lasagna! I used to DREAD the arguments! They could last for HOURS! I would stand in the kitchen asking myself how I got to be a 35-year-old housewife with two brats and a husband who expects me to be a sexy version of his mom. Did I even WANT kids? Too late now! It’s dinner time!

Last week my friend introduced me to a GREAT lasagna recipe that’s EASY to make and is a real crowd-pleaser! I thought I would pass it on! You can never have too many SIMPLE, DELICIOUS recipes, right ladies?!

~Easy Sunday Afternoon Lasagna~


  • one box oven-ready lasagna noodles
  • one 10 oz. can tomato paste
  • 20 oz. cottage cheese
  • bouillon cube
  • 3-6 tbsp. fish sauce
  • 1 lb. sausage casings
  • 2 kidneys, finely chopped
  • two handfuls cilantro
  • olive oil
  • salt, pepper, and cumin to taste

Preheat oven to 225. While oven is heating, fry chopped kidneys in olive oil over medium heat for 5 minutes. Toss in sausage casings and fry with kidneys for one additional minute. Remove from heat. Drain. Set aside.

In a 9×13 circular pan, arrange half of the lasagna noodles evenly. Sprinkle one handful of cilantro over noodles. Spread tomato paste over cilantro. Add kidneys and sausage casings. Pour entire container of cottage cheese over casings and meat. Grate bouillon cube over cottage cheese. Arrange remaining lasagna noodles on top. Sprinkle with cumin and fish sauce.

Cook for 20 minutes. Allow to cool for 5 minutes. Garnish with remaining cilantro. Deee-lish!
